1cup pasta sauce
3 jumbo shells of three colours(orange-white and green )
2garlic cloves, minced,
1 medium sweet onion, diced,
2 tsp extra virgin olive oil,
2tbsps fresh basil leaves, chopped finely,
1/2cup finely chopped three colors bell peppers
1 cup grated cottage cheese,
1sp processed cheese,
salt, or to taste,
Freshly ground black pepper, to taste,

Parmesan cheese-(optional)

Method -

Cook shells in a pot of boiling water until al dente, about 8-11 minutes. Be careful not to overcook. Drain shells and set aside to cool.

Grease a casserole dish. I used 3shells but you’ll need to cook more than that as some shells will break during the cooking process.
Cook shells in a pot of boiling water until al dente, about 8-11 minutes. Be careful not to overcook. Drain shells and set aside to cool.

Preheat oven to 400F. In a large pan sauté the garlic and onion in the oil for about 5 minutes.Add chopped three colors bell peppers .Season with salt and pepper. Add in the chopped basil, and sauté for another 2minutes.Add grated cheese. Stir in processed cheese ,salt, pepper, lemon, all to taste. Over medium heat, cook for about 2-3minutes or until most of the water cooks off.

Spoon about ¾ cup of pasta sauce into the casserole dish and spread around. Add about 2 tbsp of cheese mixture into each stuffed shell and place shells on top of pasta sauce.Arrange first orange, then white in the last green.Cover shells with the remaining pasta sauce and cheese. Cover dish with tin foil and poke several air holes. Bake at 400F for about 10 minutes or until heated throughout.

Republic Day Special: Birth of Modern India

Republic Day Special: Birth of Modern India

Republic Day

This week India will be celebrating it's 68th Republic Day. This day was marked as birth of Modern India back in 1950.

There are facts that you might have not known of this day.

  • The Constitution prepared by the Drafting Committee headed by Dr Bhimrao Ambedkar was ordered and put into compel on this day in 1950, and it pronounced India as a republic, henceforth the name. The first copy of the constitution was not printed, but rather was written by hand and calligraphed in Hindi and English.

  • In the principal Republic day parade, more than 100 flying machine took an interest. Among them were Liberators, Spitfires, Dakotas, Tempests and Harvards.

  • The Indian Air Force appeared this day. Preceding that it was known as the Royal Indian Air Force. Dropping the prefix was typical of Indian autonomy.

  • The setting was not generally Rajpath. In the vicinity of 1950 and 1954 the scenes of the Republic Day parade were Irwin Stadium (now National Stadium), Kingsway, Red Fort and Ramlila grounds. Rajpath, prior known as Kingsway, turned into the lasting scene from 1955.

  • It would appear to be unfathomable now, yet Republic Day chief visitors have included ministers from Pakistan on two events. In 1955, it was Malik Ghulam Muhammad, Pakistan's Governor General. And, in 1965, days before the war between the two nations, Rana Abdul Hamid, Pakistan's food and agriculture minister, was the main visitor.

  • Prior to the war with China in 1962, Ye Jianying, Marshal of the Chinese People's Liberation Army, was the main visitor of the Republic Day parade. He later got to be director of the standing board in China's legislature.

  • The song ‘Abide with Me’ is played on every Republic Day, because it was Mahatma Gandhi's favourite.

  • Hindi was pronounced as the national dialect on 26 January 1965.

  • Indian constitution is the longest on the planet. You undoubtedly can't read it in a single day.

  • Composing the constitution was not an easy task. The Assembly accumulated for 166 days that was spread more than 2 years, 11 months and 18 days before the last form was framed.

I hope you all will find this helpful and knowledgeable.
