Authentic Punjabi Chole

Hello Everyone,

Yes, you got it right.... Today, I am gonna share with you recipe for the most delicious and lip smacking authentic punjabi curry recipe. And the curry is none other than Punjabi Chole.

Ingredients

To prepare chick peas

200 grams White Chick Peas
1 black tea bag
Salt to taste

For gravy

1 cup onion puree
1 cup tomato pure
1 tsp ginger garlic paste
1/4 tsp turmeric powder
1 tbsp red chilli powder
1 tsp dry mango powder
1 tsp garam masala
2 tbsp oil
Salt to taste

For authentic masala

2 cardamom
1 inch cinnamon
3 black pepper
2 cloves
1 bay leaf
2 dry chilli

Method

1. Rinse and soak chick peas over night. Rinse the soaked chick peas.
2. In a pressure cooker, add chick peas along with tea bag, salt to taste and enough water. Cook in the cooler till 12 to 15 whistles. Switch off the gas and check if the chick peas got soft.
3. Next, roast all the whole spices in a pan. Stir often let the spices get the brown color on them. Be careful not to burn it. There would a beautiful aroma once they are ready.
4. Let the spices cool. Once the are cool, add all in a mixture jar and grind it to a fine powder.
5. Now, let start making gravy for our curry. Place a pan on stove, add oil to it. Once it's hot add ginger garlic paste to it. Next, add onion puree and cook untill it gets translucent. Add tomato puree to the pan.
6. After cooking for a while add the authentic masala we made, chilli powder, turmeric powder and garam masala.
7. Stir the dry masala. Add our cooked chick pea to the gravy. Stir well.
8. Add salt and 2 cup water into the pan. Stir well and cover the pan. Let it cook on medium flame. The chick peas will absorb all the flavours into it.
9. Cook untill the gravy becomes thick and is in medium consistency.
10. Now, its time to add dry mango powder. Give a quick stir. Garnish with coriander leaves.

Serve with rotis, kulcha, paratha, Puri or bhature. It even go well it jeera rice.
